Bringing pig grading into the 21st century

A new grading system for pork to identify superior eating quality is to be investigated by Britain’s largest pig breeding company, JSR Genetics.

Managing director Dr Grant Walling told the company’s annual meeting in York that the present system of grading pig carcases at abattoirs, based on only backfat depth, was outdated.
