SAUSAGE CASINGS SHORTAGE.

The large sausages preferred by the people of Switzerland, are known as cervalet sausage and made from cattle intestines.

Brazil has always been the main supplier followed by Paraguay and Argentina.

The Swiss consume 160 million of these sausages annually, yet only have casings for 70 pc of the market.

A special task force has been set up, to try and source beef casings for this great traditional delicacy.

Argentina have a domestic market shortage of their own, as the casings are eaten untreated in the traditional sense, similar to pork chittlings in the west of England.


The cervelat sausage makes up 30 pc of the total sausages consumed in Switzerland.
