Buying meat from small, local farms is expensive, but many of us try to do it, for the well-being of ourselves, animals, the planet, the farmers, or some combination thereof. It can be hard to swallow the price, but this, we feel -- I know I do -- is the true cost of meat.But here’s an interesting perspective from New York farmer Bob Comis, via the Ethicurean. He argues that the prices of local meat, poultry, and eggs are artificially high. In fact, he calls the profit margins "extortionate.
