INFLATION IN HAND.

Despite the peso falling 10% against the greenback, in the last month. Things are very calm on the domestic food market.

Argentina is now in summer, the Assado season has just started, this is when everyone in the country dines in the garden during the day, the most popular beef being flanks of beef on the bone,

The meat is cut into two inch wide strips by the butcher, they are up to a meter long, grilled on a charcoal fire in the garden with sausage and black puddings, this is the standard food for the next 5 months, normally served with a salad or baked potato.

The flank bone in taken from an 8 rib hindquarter, makes up 16% of a side of beef , this is meat used for hamburgers or sausage, in the rest of the world, this unique trade in the Argentine, gives exporters a bonus on selling primal cuts to the rest of the world.

The tradition began, when the gaucho or farm workers were given the inferior cuts as part of their salary, while the farmers took the best cuts into the house for the family.


It is not uncommon for the next 5 months, to import additional flanks from Brazil, as the market demand more than Argentina can supply. Argentina consumes 73 kilos of beef per capita annually.
