Recently, bakers and confectioners from across Russia have been presented a new type of wheat flour by Altay company OJSC PAVA. The "Zhitnitsa" product, containing an unusually rich mix of valuable substances, is interchangeable with standard flour grades in production of various bakery items. The latest tests have shown that it serves splendidly in cooking wheat cakes – the much loved Russian pastry.
Technologists of the company developed various formulations for "Zhitnitsa" use, combining it with other flour grades in different proportions, and monitoring properties of dough. The product was applied as a base for flat pancakes and wheat cakes – the result is a healthy and deliciously tasty snack, with the perfect airy texture. The bakery is nicely shaped, and has a distinctive aroma.
