Meat vendors and cattle dealers in the Philippines, are complaining that when they send animals to the new city abattoir in Barangay Tacus, they are not receiving their offal back with the carcass. This is normal procedure when contract killing livestock.
The new state of the art abattoir, has capacity for 600 pigs per day and controlled the City Chief Veterinarian, Dr Tomas Forteza, who is looking into the matter.
The butchers are used to getting back the intestines, blood, paunch and plucks (liver, heart, lungs) from animals slaughtered.
The value of this offal is known in the meat industry as the fifth quarter.
